Bucatini crispy gratin

Introduction

This is a tasty dish, inspired by the famous dish “spaghetti alla ‘carrettiera’”, that is easy to cook but rich in aromas and fragrance. This pasta can be enriched with different ingredients such as fish or smoked dressed pork. There should always be a hint of sweetness to the dish, in this case it is provided by the onion and the raisins.

Method

In a wide-bottomed pan heat the oil and brown the onions. Half way through the cooking, add the raisins, the pine-seeds and the lemon peel. If necessary, pour on a little stock. Cook the bucatini following the instructions on the packet with care. Drain the pasta and sauté on a high flame. Turn off the heat and sprinkle with the grated cheeses, breadcrumbs, salt and pepper. Divide the pasta into four lightly buttered bowls and bake au gratin in the oven on 200° for 10 minutes. Remove from the oven and serve with the chopped herbs emulsified in a little oil.

360 gr Bucatini
300 gr Tropea onions
grated peel of one lemon
60 gr raisins
40 gr Parmesan cheese
60 gr Pecorino cheese
40 gr pine-seeds
3 gr breadcrumbs
chopped aromatic herbs
1 dl vegetable stock with laurel
salt
pepper
