Farfalle salad with salmon roe

Method

1- Put the salt and lemon juice in a bowl and stir until the salt has completely melted; add the oil, some freshly ground pepper and blend the sauce well, mixing with a fork or with a small whisk.
2- Wash the chives, pat dry and chop. In the meantime, bring a saucepan of salted water to the boil and cook the farfalle until the pasta is "al dente", drain under cold water, place in a serving dish and dress with the sauce, stirring gently.
3- Add the salmon roe and the finely chopped chives to the dressed pasta, mix gently so that all the ingredients are well blended, garnish as required with a few chives and serve the farfalle salad cold.
