1- Bring a saucepan of salted water to the boil and cook the pasta until it is "al dente". In the meantime, prepare the sauce. Wash the peppers, core and seed and cut into thin strips. Wash the parsley and chop finely. 2- Trim the leek, chop finely and fry for 2-3 minutes on a low flame in a saucepan with oil; add the peppers, cover and cook for 6-7 minutes; add the tomato and cook for 15 minutes, season with salt at the end of the cooking time. 3- Finally, drain the gnocchi sardi, add the previously prepared pepper sauce immediately, sprinkle with parsley and serve hot.
