1- Peel the clove of garlic, wash it and chop it finely. Peel the carrot, trim the courgette, wash, dry and cut both into strips. Core and seed the pepper, wash and cut into thin strips.
2- Peel the onion, wash and chop finely, then fry gently in a pan with the garlic, the oil and butter on a low heat for 3 – 4 minutes without browning; add the strips of pepper and carrot and fry on a high flame for 4 minutes, stirring often with a wooden spoon.
3- Then add the strips of courgette and continue to fry for a few minutes, stirring often; season with salt and pepper, lower the flame to a minimum, cover and continue to cook for about 15 minutes; remove from the heat and add the previously washed and torn dill.
