Paccheri napoletani with a buffalo milk mozzarella sauce

Method

Prepare a béchamel sauce with the milk, cream, butter and flour in a bowl over hot water and add the mozzarella. Leave to melt gently. Separately, reduce the veal gravy with the laurel leaf and sieve. Cook the pasta in plenty of salted water, pour into the béchamel and mozzarella sauce and cream together, season to taste and arrange in the serving dish, pouring the veal gravy over the top.

20 gr butter
20 gr flour
150 gr buffalo milk mozzarella
1 laurel leaf
100 gr thickened veal gravy
