Paccheri with vegetables

Method

Boil all the vegetables in boiling, salted water and then set on one side. Brown the onion with the peppers in a pan with oil. Now add the vegetables and season with salt, pepper and herbs to taste. Cook the pasta in plenty of boiling, salted water. Drain quickly, retaining a little of the cooking water. Sauté in a pan with the prepared sauce. Serve hot and sprinkle with smoked ricotta or another mature cheese to taste.

80 gr boiled red beans
80 gr boiled white beans
80 gr green beans
60 gr red onion
