Farfalle with sweet chilli peppers


1- Trim the chilli peppers, core and remove the seeds, wash and dry. Peel the cloves of garlic and fry on a low heat for a minute in a pan with oil and then discard.
2- Put the chilli peppers in the same pan and leave to cook on a very low heat for 3-4 minutes; add the tomatoes and some freshly ground pepper and cook for 15 minutes, stirring.
3- Cook the pasta in plenty of boiling salted water until it is “al dente”, drain and add the sauce immediately, garnish with the basil leaves that have first been washed and torn with the hands, then serve.

500 sweet green chilli peppers
2 cloves garlic
a few leaves of basil
